Air Fryer Roasted Tomatoes
Air Fryer Roasted Tomatoes is a satisfyingly delicious way to serve up tomatoes, paired with sweet onions and red bell peppers.

- 2 medium tomatoes (about 1 lb)
- 1/4 large sweet onion (about 3-4 ounces)
- 1/2 medium red bell pepper (about 2-3 ounces)
- 1 Tablespoon avocado oil
- dash sea salt
Tomatoes: Cut each tomato in half. To remove the stem, cut a "v" to carve out the stem and part of the hard white flesh just below the stem. Repeat on all halves if needed. Cut each half into quarters. Set aside.
Onions: Cut the onion in half. Then cut off the top and root end, peel off the skin. Cut the half into a quarter if needed or use the entire half. Slice the onion in the direction of the ribs from top to bottom into thin slices. Place in a bowl.
Pepper: Cut the pepper in half. Then, cut out the stem and remove the seeds, along with any white ribs. Thin slice the pepper from stem to bottom. Place the ribbons in the bowl with the onion.
Oil: Drizzle avocado oil over the peppers and onions. Give them a toss to coat them well.
Air Fryer Basket: Start by placing a piece of foil in the air fryer basket and shaping it to the basket, then remove it. I take the foil out so that it doesn't get swept up to the top while the air fryer is heating. Follow the specific directions for your air fryer, but in mine, I place the basket in the air fryer using the 'air fry' setting (400 °F) for 10 minutes (see the note below about longer cooking time). Allow it to preheat, then carefully add the foil back to the basket.Pour the onions and peppers in the bottom of the basket and spread them out.Place the tomato halves over the onions and peppers, covering the onions and peppers. Sprinkle with salt.I don't turn my tomatoes over, feel free to do so.Note: At the end, the onions will still have a little crunch, which I prefer over mushy onions. If you want your onions done a bit more, you can place them with the peppers in the basket and cook for 5 minutes before adding the tomatoes on top to then cook for an additional 10 minutes. At the end of the cooking time, carefully remove the foil from the basket and place the tomatoes, onions, and pepper on a dish to serve. Serve immediately to keep them from cooling.
