Tuna with Pico de Gallo and Cucumbers
Tuna with pico de gallo and cucumbers is a tasty and healthy variation on tuna salad, with crisp cucumbers and a kick of jalapeƱo pepper.

- 2 - 7 oz cans of tuna in water
- 1 cup pico de gallo salsa
- 1 cucumber, thick sliced and cubed
- dash of sea salt (optional)
- corn chips (optional)
In a mixing bowl, add well drained tuna.
Peel (or don't) the cucumber. Slice into thick, 1/2" slices, then cut into small cubes. Add to the tuna mix.
Add pico de gallo, a dash of salt, and mix until well combined.
Serve with chips, over lettuce, or alone.
