Tuna with Pico de Gallo and Cucumbers

Tuna with pico de gallo and cucumbers is a tasty and healthy variation on tuna salad, with crisp cucumbers and a kick of jalapeƱo pepper.

  • vegetable peeler (optional)

Ingredients
  

  • 2 - 7 oz cans of tuna in water
  • 1 cup pico de gallo salsa
  • 1 cucumber, thick sliced and cubed
  • dash of sea salt (optional)
  • corn chips (optional)

Instructions
 

  • In a mixing bowl, add well drained tuna.
  • Peel (or don't) the cucumber. Slice into thick, 1/2" slices, then cut into small cubes. Add to the tuna mix.
  • Add pico de gallo, a dash of salt, and mix until well combined.
  • Serve with chips, over lettuce, or alone.
