Too Pretty Not to Eat

Look at those plump raspberries, inviting cubes of creamy Havarti, and crunchy pecans. The greens ain’t bad either… lush, deep hues of purple, green and every color in between. I love the simplicity and vibrant colors. Quick to pull together and so delicious. When a dish like mixed salad leaves with raspberries and Havarti is beautiful, it’s just too pretty not to eat.

What You’ll Need to Make Mixed Salad Leaves with Raspberries and Havarti

  • Lettuce – The foundation. While lettuce doesn’t often bring much to the table in terms of flavor, they bring it in the visual department and texture. Crunchy, velvety, green, purple. Select your favorite mixed greens.
  • Raspberries – Vibrant in color, what a great contrast against the greens. These little flavor bombs are a punch of sweetness. Best when in season. If you cannot find raspberries, try blackberries, or blueberries.
  • Havarti Cheese – This is a great cheese, it’s mild, soft, and creamy. A Gouda might be a good substitute, never a sharp cheese. I also think a cutting the cheese into cubes the same size as the berries and pecans balances the salad.
  • Praline Pecans – These are readily available now in the grocery store. They are a wonderful bit of crunch and just a tad sweet.

How to Make Mixed Salad Leaves with Raspberries and Harvarti

Like most salads this is all about the prep. Was and cut, or as I prefer to tear the lettuce into manageable pieces that compliment the size of the other components (raspberries, cheese, and pecans).

Cut the Havarti into cubes. Then, rinse and pat dry the raspberries. Thin slice the green onions. Sprinkle both plus the pecans over each salad.

Top your salad with Honey Mustard Vinaigrette Dressing. A combination of sweet honey, spicy brown mustard, tangy balsamic vinegar, and light sunflower oil.

Tips, Tricks, & FAQs

  • Lunch. All of these ingredients will hold up well if combined and stored overnight for an easy packed lunch. Pack your favorite dressing separately.
  • Shake it Up. Pour the dressing over the lettuce, but the lid back on your container and give the salad a good shake to evenly distribute the dressing. I think this also requires less dressing.
  • Storing Extras. Store unused green onions stalks wrapped with a damp paper towel and stored in a plastic bag.

Ingredients
  

  • 4 cups washed and torn mixed greens (like red oak leaf, green gem lettuce, or other fancy lettuce)
  • 2/3 cups raspberries (about 3 ounces)
  • 2/3 cups cubed Havarti cheese (about 3 ounces)
  • 2/3 cups praline pecans (about 3 ounces)
  • 1 bunch green onions
  • honey mustard vinaigrette dressing (find link below)

Instructions
 

  • Lettuce. Cut or tear mixed lettuce into 2"x2" pieces. Place 1 cup of lettuce in each salad bowl or plate.

  • Raspberries. Rinse and gently pat dry raspberries. Sprinkle over top each salad.
    2/3 cups raspberries (about 3 ounces)
  • Green Onions. Taking the green onions, peel any outer stems that are tough or becoming soft on the outside. Cut off the green until you reach the tender portion. Thin slice (on an angle to make it visually interesting) and sprinkle over each salad.

  • Cheese. Cube up the Havarti and add the cubes to the greens.
    2/3 cups cubed Havarti cheese (about 3 ounces)
  • Pralines. Measure out and sprinkle praline pecans over each salad.
    2/3 cups praline pecans (about 3 ounces)
